Spinach & Cheese Manicotti

This was given to me by Rachel B. and has become one of our families favorites.


15 oz. cottage cheese (or ricotta)
1, 10 oz. package chopped spinach – thawed
1 ½ cup shredded mozzarella (divided)
1 egg
2 tsp. fresh parsley
½ tsp. onion powder or minced onion
½ tsp. pepper
1/8 tsp. garlic powder
2 jars (28 ounces each)
1 cup water
1 package 8 ounces manicotti shells

9x13 pan

Mix cottage cheese, spinach, 1 cup mozzarella, ¼ cup parmesan cheese, egg & spices & parsley. Fill shells, use hands, mix sauce and water. Pour 1 cup mixture into bottom of un-greased pan. Put in the manicottis. Pour rest of sauce, sprinkle with remaining parmesan and mozzarella. Bake uncovered 40 – 50 minutes at 350 degrees.
