Salsa Chicken

Need:
4 Boneless, skinless breast halves
1 cup salsa
1 package taco seasoning
2 cups water
2 cups Minute Rice, uncooked
1 can black beans, drained
1 cup Cheddar or Mexican cheese
sour cream
(I sometimes add some corn too)

Directions:
Bring chicken, salsa, taco seasoning mix and water to a boil in a large skillet; cover.
Simmer 10 minutes. Return to boil. Stir in rice and beans. Sprinkle with cheese; cover.
Cook on low heat 5 minutes. Top with sour cream if desires.

I made this dish for dinner tonight and my husband and I loved it! My one year old loved it too. My 3-year old picked at it. He only ate some rice! He is very picky though! I added the corn!
