Chicken Tortilla Soup

I LOVE this soup! It is so easy and so good. You will not be disappointed. I always double for my family of 6. 4 servings
4 corn tortillas, torn into small strips
1/2 lb. chicken breast, cut into bite sized chunks
2 (14 oz. each) cans chicken broth
1 C favorite salsa
1 C frozen or canned corn
1 C shredded cheddar cheese
Cook chicken with very small amount of oil or Pam over med-high heat for 5 min. Add broth, salsa, corn and tortillas. The tortillas will dissolve during cooking and thicken soup. Bring to boil, then reduce heat to med-low and let simmer for 15 min.
Ladle soup into bowls and serve with crushed corn chips, cheese, sour cream, avocado, sliced olives, or any desirable combination of these things:0). We eat this with cheese quesadillas and salad.

try using a little sour cream and a little scoop of quac. and a bit of cilantro.

I LOVE LOVE this soup and so does my family. I add in black beans and a can of diced tomatoes. I don't really measure just keep adding ingredients until the pot is full. a few chips and a little sour cream. Super Yummy!!!!
